Recipe Day! Nudge summer along with this Tequila Lime Pound Cake…
Is it summer yet? Well, not quite.
But you can make summer arrive a little early inside your kitchen with this delicious, moist, heavenly pound cake. Like all the amazing food that Atlanta Home Improvement's Sandi Edelson makes it's:
a) easy to make.
b) taste-tested and verified as delicious by our whole office.

Tequila Lime Pound Cake
1 Stick of unsalted Butter
½ cup vegetable oil
1 ¾ cups granulated sugar
4 large eggs
2 cups all purpose flour
1/2 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons vanilla
¼ cup tequila
3 tablespoons fresh lime juice and 1 tablespoon margarita mix
½ cup plain lowfat yogurt mixed with 4 tablespoons milk(do not use skim milk)
2 teaspoons lime zest.
Mix together the flour, baking powder and salt.
Cream butter and oil with sugar. Add eggs, one at a time till well blended.
Mix together the tequila, lime juice/margarita mix and add slowly to blend.
Add the yogurt mixture and blend. Slowly add the flour mixture and stir in gently.
Pour batter into a 9” bundt cake pan, sprayed with baking spray.
Bake at 325 degrees for about 40 minutes, or until cake tester comes out fairly clean.
After about 20 minutes, turn cake out of the pan, onto a rack. While still warm, brush the cake with the tequila glaze, allowing it to soak in slowly.
Tequila Lime Glaze
3 tablespoons unsalted butter
½ cup sugar
2 tablespoons water
Juice of one lime
¼ cup tequila.
Bring all ingredients to a simmer for about 3 minutes. Brush onto the warm cake.
Garnish cake with fresh grated lime rind.
