Lemon White Chocolate Chip Pecan Sandies
Ingredients
• 8 oz. unsalted butter, room temperature
• 18 oz.brown sugar
• 2 eggs
• 1Tbsp.vanilla extract
• 1Tbsp. lemon extract
• Zest of 1 lemon
• 1 tsp. baking soda
• 1 tsp. baking powder
• ½ tsp salt
• 13 oz. flour
• 16 oz. chopped pecans
• Variations: 2 cups chopped pecans; 2 cups white chocolate chips
Method
Pre-heat Wolf Countertop Oven to 325 degrees F. in the Convection Bake Mode.
In the work bowl of a mixer, cream the butter with the sugar until light and fluffy. One at a time, add the eggs, scraping down the bowl between the two. Add the vanilla and lemon extract and continue to mix on medium high speed until well incorporated. Sift together the flour, baking soda and baking powder, salt and add to the bowl with the mixer stopped. Add the pecans and mix on low speed for 30 seconds. Scrape down the sides of the bowl with a rubber spatula and mix again until just combined.
Scoop out 8 doughs onto a small baking sheet and line it with parchment paper and bake 1 sheet at a time. Bake for 12-14 minutes or until lightly browned.
